You can find birch wood in Genshin close to the Dawn Winery teleport point. There are many places where you can find it, but this particular one is conveniently next to the Statue of the Seven. Official name for the teleport point is Windwail Highland, Mondstat. As soon as you teleport move a few meters north. All the trees there are birch.
