Does FF7 Rebirth Demo Progress Carry Over?

Yes and no; only a part of your FF7 Rebirth demo save is going to carry over once the full game launches. Namely, the Nibelheim part of it will travel with you to the full game, so you can feel free to explore the whole place and extract everything you can from it without the fear of losing the fruits of all that labor. On the other hand, the part that takes place in Junon will not carry over. Apparently, the developers have altered that section “make the content more compact.” Plus, it takes place way later in the game, which would make that progress carrying over a bit silly in the grand scheme of things.

Final Fantasy 7 Rebirth Demo Rewards

There are two rewards that you can get for playing the FF7 (or Final Fantasy 7) Rebirth demo, if you retain the save file: the Kupo Charm and the Survival Set. The former increases the amount of resources extracted (at a set rate), and the latter gives you different items that will help you on your journey, like ethers, potions and the like. As for how you actually unlock these, I think it’s enough to have the save data on your PlayStation 5 when you install the full game. I don’t believe it’s necessary to beat any particular segment. If I’m mistaken, please do correct me in the comments, and I’ll be sure to update the guide.
