This one is still collectable after the fact. I beat the game and went back into the school where you can use the alien tech to warp into a vent above where it was initially, follow the duct left and Poodlesaurus Rex should be visible at the bottom of the screen simply make your way to it.

If you have finished the quest, you’ll not be able to collect Poodlesaurus Rex, that’s why it’s missable.
